Flour 45 kg

Salt 765 g

Fresh Yeast 1.8 kg

Water 27 kg

* Add flour and fresh yeast to Kumkaya SP80 Mixer, add 23 kg of water little by little and knead for 5 minutes at low speed.

* After mixing the flour and water, knead at high speed for 5 minutes, add the remaining water and salt and knead for another 5 minutes.

* After the dough reaches a homogeneous consistency, it is transferred to the Kumkaya DM2000 dough cutting and weighing machine and cut into 80 gram pieces.

* 80 gr cut doughs are placed on trays and fermented for 45 minutes in the steam fermentation room under the Lidya 24 Convection oven.

* Bake in a Kumkaya Lidya 24 convectional oven preheated to 270 degrees for 15 minutes.

* The cooked rollers are ready for sale after resting in a warm place.
